Spiced Bourbon & Apple Cider with Chilli Lime Popcorn

Whether you’re looking to entertain or just searching for a quick and easy snack that will satisfy you on the cooler nights, look no further than this deliciously warming Spiced Bourbon and Apple Cider with Chilli Lime Popcorn. This is the ultimate crowd pleasure, or treat for two. Any whiskey will work well in this recipe. 
Popcorn is best served immediately, as once butter flavouring is added, it will become soggy.

Spiced Bourbon and Apple Cider with Chilli Lime Popcorn Recipe

Serves 4

Spiced Bourbon and Apple Cider

1 lemon, juiced
3 red apples
1 litre apple cider
2 cinnamon sticks
5 cloves
2 star anise
2 x 1cm thick orange slices
10 peppercorns
120ml Fireball cinnamon whiskey

Chilli Lime Popcorn

2 tbsp vegetable oil
½ cup popping corn
100g butter
1 tsp chilli powder
1 tsp cumin
1 tsp lime zest
2 tsp lime juice
1 tsp sea salt

Method:

To make apple chips, combine lemon juice in a large bowl with 4 cups of water. Thinly slice apples crossways, using a mandolin if you have one. Immerse in the lemon water for 10 minutes. Drain well on paper towel. Place apple slices on a wire rack in a single layer. Transfer to a preheated 65˚C oven. Cook for 2 hours or until crisp and dried.

Place the cider, cinnamon, cloves, star anise, orange and peppercorns in a saucepan over a medium heat. Bring to a simmer. Simmer for 5 minutes, or until fragrant. Remove from the heat. Add whiskey. Strain into mugs. Garnish with dried apples and serve hot with Chilli Lime Popcorn.

To make popcorn, heat oil in a large saucepan over a high heat. Stir in corn. Cover and cook, shaking pan often, for 2 to 3 minutes or until popped. Transfer to a large bowl.

Melt the butter in a small saucepan. Remove from the heat. Stir in chilli, cumin, zest and juice. Add to popcorn with salt. Toss to coat.
