Rice Paper Rolls with Lemongrass Chicken

Soft Rice Paper Rolls with Lemongrass Chicken, Rice Noodle and Perilla Leaves with Hoisin Sauce

 

Ingredients:

Lemongrass Chicken

2 boneless, skinless chicken breasts

3 stalks lemongrass (white part only, finely chopped)

3 cloves garlic (minced)

1 tablespoon soy sauce

1 tablespoon fish sauce

1 tablespoon vegetable oil

1 tablespoon brown sugar

1 teaspoon ground black pepper

1 teaspoon ground turmeric (optional)

Rice Paper Rolls

12 rice paper wrappers

1 cup cooked vermicelli noodles

1 large carrot (julienned)

1 cucumber (julienned)

1 cup fresh herbs (mint, cilantro, basil)

1/2 cup lettuce leaves (shredded)

Hoisin Dipping Sauce

1/2 cup hoisin sauce

2 tablespoons peanut butter

1 tablespoon soy sauce

1 tablespoon lime juice

1 clove garlic (minced)

2-3 tablespoons warm water (to thin the sauce if needed)

Method:

Preparing the Lemongrass Chicken

Marinate the Chicken: In a bowl, mix lemongrass, garlic, soy sauce, fish sauce, vegetable oil, brown sugar, black pepper, and turmeric. Add the chicken breasts and coat well. Marinate for at least 1 hour, or overnight for best results.

Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked and slightly charred. Let it rest for a few minutes, then slice thinly.

Preparing the Rice Paper Rolls

Prepare the Wrappers: Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds to soften. Lay it flat on a clean, damp kitchen towel or cutting board.

Fill the Roll: Place a small amount of vermicelli noodles, carrot, cucumber, herbs, and lettuce in the centre of the wrapper. Top with a few slices of grilled chicken.

Roll it Up: Fold the sides of the rice paper wrapper inward, then roll tightly from the bottom to the top, like a burrito. Repeat with remaining ingredients.

Making the Hoisin Dipping Sauce

Mix Ingredients: In a small bowl, combine hoisin sauce, peanut butter, soy sauce, lime juice, and minced garlic. Mix well.

Adjust Consistency: Add warm water a tablespoon at a time until you reach your desired consistency.

Serving:

Arrange the rice paper rolls on a platter and serve with the hoisin dipping sauce on the side. Enjoy your char-grilled lemongrass chicken rice paper rolls with the delicious homemade hoisin sauce!
