Simple Summer Pasta Recipe

Serves 4

Ingredients:

400g spaghettini

6 ripe tomatoes, finely chopped

2 cups watercress sprigs

2 garlic cloves, finely chopped

¼ cup olive oil

1 lemon, finely shredded rind and ¼ cup juice

1 bunch chives, finely chopped (you will need approx ¼ cup)

½ cup basil leaves, roughly chopped

½ cup mint leaves, roughly chopped

Grated parmesan, to serve

Method:

Cook pasta in a large saucepan of boiling, salted water until just tender, as per packet instructions. Drain and return to saucepan.

Add tomatoes, watercress, garlic, oil, lemon rind, lemon juice, chives, basil and mint. Toss until well combined. Serve warm or cold.

Add parmesan to taste.

Smart Tip:

Al dente pasta takes longer to digest, keeping you full for longer.
