Alma’s Beef Casserole
This hearty stew is the perfect excuse to get together with friends. Serve with plenty of bread and a refreshing yoghurt dip.

Everyone needs a basic beef casserole recipe – this recipe uses tart green apple, curry powder, tomato relish and sultanas to add extra flavour. Alma’s Beef Casserole is the perfect recipe to have in your repertoire. Once cooked, the beef casserole can be packed into a sealable container and frozen for later use.

Alma’s Beef Casserole Recipe

Serves 2-4

Ingredients:

500g of beef diced into 2cm cubes

1 onion, finely chopped

1 green apple, cut into wedges

2 tsp flour

1 tsp curry

2 tsp sugar

2 tbsp tomato relish

1 cup water

½ tsp crushed chilli

½ cup sultanas (optional)

Method:

In a large pot, sauté onions and apple for about 5 minutes, until softened. Add the beef. Mix remaining ingredients together and add to the pot. Season to taste with salt and freshly ground black pepper. Bring to the boil.

Reduce the heat, cover and simmer for 1 hour, or transfer to a casserole dish in a moderate oven (180°C) and cook for 1 hour.
