Sesame Pancakes Recipe

Makes 20 / Serves 6

1 1⁄2 cups ‘00’ flour, sifted

1⁄4 tsp table salt

2 tsp sesame oil

How to make this Sesame Pancakes Recipe:

1. Place the flour and salt in a medium bowl. Pour in 3⁄4 cup of boiling water and mix well to combine. Turn out onto a clean surface and knead for about 3-4 minutes, or until a smooth dough forms. Place the dough in a lightly greased bowl, cover with a clean, damp tea towel and allow to rest for 30 minutes.

2. Divide the dough into 20 equal pieces and roll each into a small ball. Brush the balls with the sesame oil. Press two balls together and flatten them into a disc. Roll each disc into a 12cm- round circle.

3. Heat a large, non-stick frying pan over medium heat. Working in batches, cook the pancakes for 1-2 minutes on one side. Turn and cook for 30 more seconds on the other side, or until just golden.

4. Each pancake will have 2 layers. While still warm, pull the layers apart to separate them into 2 pancakes. Keep all warm until ready to serve.
