RECIPE: Sesame-Crusted Beef with Ponzu Dressing. Brought to you by MiNDFOOD. Sesame seeds add a great, nutty flavour to meats. This eye fillet, encrusted in black and white sesame seeds, is a delicious Asian-inspired roast.
Serves 8
¾ cup light soy sauce
3 tbsp caster sugar
1 tbsp rice vinegar
1 tbsp ginger, finely grated
1 tsp sesame oil
2 x 1kg eye fillet
¼ cup black sesame seeds
¼ cup white sesame seeds
1 tbsp peanut oil
4g bonito flakes
1 tbsp lime juice
baby herbs, to serve
Place ¼ cup soy sauce, 1 tablespoon sugar, rice vinegar, ginger, and sesame oil into a large bowl and mix to combine. Add beef, turning to coat, then cover and refrigerate for 2 hours.
Preheat oven to 180°C. Remove beef from marinade; wipe off excess. Place sesame seeds on a baking tray
and roll beef in sesame to evenly coat.
Heat oil in a large, nonstick frying pan over medium-high heat. Add beef and cook for 1-2 minutes on each side, or until golden.
Place on a baking tray lined with baking paper and roast for 20 minutes for medium rare. Let rest for 10 minutes.
Place remaining soy sauce and sugar in a small saucepan and cook, stirring, over medium heat until sugar dissolves. Simmer for 4-5 minutes, or until sauce thickens. Stir in bonito flakes and lime juice, then set aside and let cool to room temperature.
To serve, thinly slice beef and place on a serving platter, spoon ponzu dressing over beef, and top with baby herbs.
