Salmon Skewers with Hazelnut Dressing

This delicious Salmon Skewers with Hazelnut Dressing recipe features fresh, succulent salmon fillets paired with tender young leeks. Makes 4 serves

Ingredients

  • 2 young leeks, stalks only
  • 500g skinless salmon fillet, cut into 5cm pieces
  • Juice of ½ lemon
  • 70g raw hazelnuts, blanched
  • 5 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp whole grain mustard
  • 2 tsp honey

Method

  1. Boil or steam the leek for a few minutes until just al dente. Drain and let cool. Cut the leek stalks into 4cm pieces. Thread the salmon and leeks alternately onto pre-soaked wooden skewers.
  2. To make the hazelnut dressing, coarsely chop the hazelnuts and roast them in a pan until light golden brown. Allow to cool. In a bowl, mix the hazelnuts with oil, vinegar, mustard and honey. Season.
  3. Grill or fry the skewers over a high heat for 3 minutes each side or until tender and cooked through.
  4. Drizzle leek salmon skewers with lemon juice and serve with the hazelnut dressing.
