1 multigrain bread roll, cut in half, horizontally
4 rocket leaves
1 slice of chargrilled red capsicum
4 slices salami
2 tbsp crumbled goat’s cheese
1 tsp olive oil
small bunch of grapes, to serve
small bottle of orange juice, to serve
1. Place base of bread roll onto flat surface. Top with half rocket leaves, capsicum, salami, cheese and oil. Season with salt and pepper.
2. Top with remaining rocket leaves, capsicum, salami, cheese, oil and bread roll top. Wrap in plastic film and pack in lunch box with a bunch of grapes and bottle of orange juice.
