A galette is a freeform flat cake, cooked on a baking tray. The pastry edges of the galette are folded over the filling, leaving an opening from which the filling can be seen. This Rustic Strawberry Galette is filled with fresh strawberries, raw sugar and vanilla. Once cooled slightly dust with icing sugar and serve with vanilla ice cream.
Rustic Strawberry Galette Recipe
Serves 4
Ingredients:
50g almond flour
1 egg
1 tbsp milk
1 tbsp raw sugar
1 tsp icing sugar, to dust
Vanilla ice cream, to serve
Pastry
150g flour
150g spelt flour
2 tbsp confectioner’s sugar (or pure icing sugar)
100g cold butter, diced
Strawberry Filling
500g strawberries, hulled and sliced
5 tbsp raw sugar
½ tsp vanilla powder
1 ½ tbsp cornstarch
Method:
To make pastry, combine flours, sugar and a pinch of salt in a bowl. Mix in the butter until it becomes a crumbly dough. Add 50ml cold water and gently mix until the dough just holds together.
Wrap in plastic wrap and place in the refrigerator for an hour.
To make filling, place sliced strawberries in a bowl and mix with raw sugar, vanilla and cornstarch.
Roll out the dough on a lightly floured work surface to about 3-4 mm thickness. To make individual galettes, cut out 8 circles, 13cm in diameter, using a bowl or a cookie cutter. Place the pastry on a baking tray lined with baking paper.
Sprinkle almond flour over the pastry. Add the strawberry filling, leaving a free margin around the edges. Fold the edges over the strawberries and press lightly so that the dough stays in place.
Preheat the oven to 175°C (155°C°fan forced). Place the galette in the freezer for 10 minutes. Whip the egg and milk together. Brush the edges with egg mixture and sprinkle the raw sugar.
Bake in the centre of the oven for 25-30 minutes or until the edges are golden brown and the filling is bubbly. Allow to cool slightly and dust with icing sugar. Serve with vanilla ice cream.
