Indulgent Rum and Raisin Ice Cream
Make the whole crowd happy with some tasty homemade ice cream.

Rum and Raisin Ice Cream is a classic dessert that brings together the rich, warm flavours of dark rum and sweet, plump raisins, all swirled into creamy, velvety ice cream.

Rum and Raisin Ice Cream Recipe

Makes 1 litre

Ingredients:

¼ cup dark rum

½ cup raisins, coarsely chopped

1 litre ice cream basechurned until almost set

Waffle cones, to serve

Method:

Simmer rum and raisins in a small saucepan over high heat. Set aside for 30 minutes to cool.

Add raisin mixture to almost-set ice cream base and churn until just combined. Spoon into a metal container. Cover with baking paper and place in freezer for 6 hours or until firm. Scoop into waffle cones to serve.
