Roast Chicken with Thai Curry Sauce Recipe

Ingredients

  • 1 whole chicken, about 1.4-1.65kg
  • 50g butter
  • 1 tsp chicken seasoning
  • 200g green beans, trimmed
  • 1 bok choy, cut into quarters lengthwise
  • 1 tbsp olive oil
  • Coriander and lime halves, to serve
  • 200ml coconut cream
  • 1 tbsp red curry paste
  • 1 stalk lemongrass, white part only, finely chopped
  • Juice of 1 lime

Method

  1. Preheat the air fryer to 200°C. Pat the chicken dry with paper towels. Rub the chicken with butter, chicken seasoning, salt and pepper.
  2. In a bowl, toss the green beans, bok choy and olive oil, and season with salt and pepper.
  3. Place the chicken in the air fryer basket and air fry for 15 minutes. Turn and air fry for another 15 minutes.
  4. Reduce the temperature to 150°C and continue cooking for another 30 minutes, turning every 10 minutes.
  5. In the last 10 minutes, add the beans and bok choy to the chicken in the air fryer basket. When the chicken is cooked through, rest it for 5 minutes before serving.
  6. Meanwhile, make the curry sauce. In a saucepan add the coconut cream, red curry paste, lemongrass and lime juice. Bring to a boil over medium-high heat, reduce heat and simmer for 5 minutes.
  7. Slice the roast chicken. Serve with vegetables, curry sauce, coriander and lime halves.

Preheating the air fryer ensures that your chicken starts cooking immediately. Set the air fryer to the recommended temperature based on the chicken cut you are using.

Always arrange the chicken in a single layer in the air fryer basket, leaving space for hot air circulation.

After cooking, let your chicken rest for about 5 minutes. Resting locks in juices and keeps the meat moist.
