Turkey with Preserved Lemon and Fresh Date Stuffing recipe
Serves 8
Ingredients:
60g butter
2 tbsp olive oil
1 large brown onion, finely chopped
4 rashers bacon, rind removed, finely chopped
5 cups fresh white breadcrumbs (about 10 slices bread)
2 tbsp finely chopped preserved lemon
8 fresh dates, stones removed, chopped
1 egg, whisked
1 x no. 5 whole turkey
2 tbsp plain flour
2½ cups chicken stock
Method:
Heat butter and oil in a frying pan over medium heat. When butter is sizzling add onion and bacon. Cook, stirring occasionally, for 10 minutes or until onion is soft. Allow to cool.
Preheat oven to 180C. To make stuffing, combine onion mixture, breadcrumbs, lemon, dates, egg, salt and pepper in a large bowl. Fill front and back cavities of turkey with stuffing. Bake turkey according to instructions on packaging (about 3 to 3½ hours) in a large roasting pan. Transfer turkey to a chopping board and cover to keep warm.
To make gravy, drain pan juices into a bowl, leaving 2 tbsp juices in roasting pan. Put pan over medium heat. Sprinkle flour over pan juices and whisk until well combined. Slowly add chicken stock, whisking constantly until well combined. Bring mixture to the boil, stirring constantly. Reduce heat to low and simmer for 2 minutes or until gravy has thickened. Serve turkey with gravy.
