The deliciously warming spices in chai can help ease the symptoms of a cold or flu. Use honey instead of raw sugar for a more wholesome and traditional flavour.
Serves 4
2 tbsp sliced ginger
4 whole cloves
6 green cardamom pods, bruised
1 cinnamon stick
1 tbsp raw sugar
1 black tea bag
2 cups soy milk (or unhomogenised milk)
Using a mortar and pestle, roughly crush ginger, cloves, cardamom and cinnamon to release flavours. Put spices in a pan with 1 cup water and bring to the boil. Reduce heat and simmer for 5 minutes. Add sugar and stir to dissolve. Add tea bag and soy milk immediately (this minimises the effect of the caffeine in the tea bag). Heat to almost boiling. Strain and serve.
