Tropical Fruit Salad & Limoncello Granita

Tropical Fruit Salad & Limoncello Granita recipe, brought to you by Weight Watchers and MiNDFOOD.

A refreshing and tasty after-dinner snack or dessert that wont make you feel guilty.

¼ cup (40g) icing sugar

2 tbs limoncello (see note)

3 cups ice cubes

1 mango, chopped  

½ pineapple, chopped  

2 kiwifruit, chopped 

2 star fruit (carambola), thickly sliced

2 bananas, thickly sliced

½ cup fresh mint leaves

1 Place sugar, limoncello and ice in a food processor or blender and process until ice is crushed. Place granita, uncovered, in a large freezerproof dish in the freezer to f irm up for a few minutes.

2 Meanwhile, place mango, pineapple, kiwifruit, star fruit, bananas and mint in a large bowl. Toss gently to combine. Serve fruit salad topped with granita.

NOTE: Limoncello is an Italian lemon-flavoured liqueur and is available from most bottle shops. You can also use orange-flavoured liqueur, such as Cointreau, or for a non-alcoholic granita, replace it with lemon juice. The ProPoints values remain the same.
