2 eggs
1 cup boiling water
¾ cup caster sugar – CSR
80g margarine – Nuttelex
1¼ cups dates, chopped – Trident
1 tsp bicarbonate of soda – McKenzie’s
1½ cups self raising flour, sifted – White Wings Organic
1 Preheat oven to 170°C.
2 Mix the dates and bicarbonate soda in a bowl. Pour boiling water over dates and leave to stand for 30 minutes. Cream the margarine and the sugar. Add the eggs one at a time and beat well. Fold in sifted flour. Stir in date mixture. Pour into a greased ovenproof dish. Cook for 30-40 minutes or until firm when touched in the centre.
Sauce
¼ cup golden syrup – CSR
125g margarine – Nuttelex
1 cup brown sugar – CSR
1 cup cream – Pura Meadowvale
1 Melt the margarine, sugar and golden syrup. Stir until dissolved. Remove from heat and stir in the cream. Cut the pudding into squares and pour sauce over the top. Serve with cream or ice cream.
