Spicy Calzone with Chorizo, Green Chilli and Sour Cream Recipe
Makes 1
Ingredients:
1 quantity pizza dough, find the recipe for pizza dough here
½ cup passata, find a homemade passata recipe here
2 chorizo, thinly sliced
300g kidney beans, rinsed
3 cups Manchego, grated
200g store-bought chargrilled capsicum
1 cup coriander leaves
2 long green chillies, sliced
sour cream, to serve
Method:
Preheat oven to 220°C. Roll out dough on a lightly floured surface to form a large rectangle. Place dough on a lightly oiled baking tray.
Spread half of the pizza base with passata and top with chorizo, kidney beans, Manchego and capsicum.
Fold other half of dough over to enclose filling and press edges together to seal. Bake calzone for 30-35 minutes or until golden and base is crisp. Serve with a salad of coriander leaves and chillies and a side of sour cream.
