Shaking beef is a simple dish with amazing robust flavours of tender beef fillet with garlic, radish and red onions.
800g beef fillet or sirloin steak
4 garlic cloves, crushed
¼ cup fish sauce
2 tbsp grated dark palm sugar
(or brown sugar)
2 tbsp vegetable oil (or peanut oil)
1/3 cup lemon juice
1 tsp ground white pepper
1 tsp ground black pepper
1 tsp salt
steamed rice, to serve
butter lettuce leaves, to serve
6 radishes, finely shredded, to serve
1 red onion, cut into thin wedges, to serve
1 Using a sharp knife, cut beef into thin diagonal slices. Combine garlic, fish sauce, sugar and 2 tsp oil in a glass bowl. Add beef to marinade and stir until well combined. Cover and refrigerate for 1 hour.
2 To make lemon pepper sauce, combine lemon juice, white and black pepper and salt in a jug. Cover until ready to serve.
3 Heat a wok over high heat. When hot add 1 tsp oil and swirl around wok. Add a sixth of the beef and stir-fry for 2 minutes or until browned and just cooked. Transfer to a bowl. Cook remaining portions of beef, adding oil as required.
4 Serve beef with steamed rice, butter lettuce leaves, radish, red onion and lemon pepper sauce.
