Seafood Platter with Lime and Coriander Dressing
Seafood Platter with Lime 
and Coriander Dressing recipe, brought to you by MiNDFOOD.

Serves 6

3/4 cup fish sauce

1/3 cup fresh lime juice (you will need approx 3 large limes)

1 tbsp caster sugar

1 bunch fresh coriander, leaves removed, finely chopped

6 cups crushed ice cubes

3 cooked lobsters, halved lengthways, deveined, cleaned

6 cooked crabs

18 cooked prawns, peeled, deveined, tails intact

3 dozen oysters

lemon wedges, to serve

Combine fish sauce, lime juice, sugar and coriander in a bowl. Pour into a serving jug.

Place ice cubes onto a large serving platter. Place seafood onto prepared platter. Serve with lime and coriander dressing and lemon wedges.
