Seafood Fritto Di Mare is crispy fried seafood made the Italian way. Make a batter to lightly coat the seafood, and fry until golden. Serve seafood with lemon salt, garlic mayonnaise and lemon wedges.
Seafood Fritto Di Mare Recipe
Serves 6
Ingredients:
2 large lemons, finely grated rind
1/4 cup sea salt flakes
1 1/3 cups plain flour
1 tsp salt
1/4 tsp white pepper
2 eggs, whisked
1 1/2 cups soda water, chilled
6 ice cubes
vegetable oil for deep frying
400g boneless white fish fillets
12 large green prawns, peeled, deveined, tails intact
6 small cleaned baby octopus
375g tub greenshell mussels, drained and rinsed
store-bought garlic mayonnaise, to serve
lemon wedges, to serve
Method:
Combine lemon rind and sea salt flakes in a bowl. Spoon into 6 small individual dishes. Sift the flour into a bowl. Add salt and pepper. Stir until combined. Make a well in the centre. Add egg. Slowly add soda water, whisking until smooth. Add ice cubes.
Preheat oven to 160˚C. Place a wire rack onto a baking tray. Heat oil in a large, deep saucepan over medium-high heat. When hot, lightly coat fish with batter and cook for 3 minutes or until golden. Transfer to tray and place in oven to keep warm. Cook remaining seafood and transfer to oven. Serve seafood with lemon salt, garlic mayonnaise and lemon wedges.
