Oven-Baked Sausages and Balsamic Tomatoes Recipe
Ingredients:
12 sausages
6 garlic cloves, sliced
2 red onions, cut into wedges
olive oil
600g cherry tomatoes, halved
3 tbsp balsamic vinegar
fresh basil leaves, torn, to serve
Method:
Preheat oven to 180C. In a large roasting tin toss together sausages, garlic and onion with a little oil. Bake for 15 minutes until golden.
Add tomato and balsamic vinegar. Season with salt and pepper and toss gently. Return to oven for a further 15 minutes.
Stir in a handful of basil leaves before serving.
