Lamb Pesto Cutlets
From the author’s of “4 Ingredients” comes a selection of quick-and-easy meals for the gluten-free family.
Serves 2
6 lamb cutlets
3 tbs. GF basil pesto
3 tbs. parmesan cheese
Preheat oven to 180°C. Place cutlets on a baking paper lined tray. Combine pesto and parmesan and dollop 1 tbs. of mixture on top of each cutlet. Place in the oven and cook for 20-30 minutes or until cooked through. Note: Can also do on a BBQ — cook one side of the cutlets first before turning over and then place pesto and parmesan mixture on top of the cooked side.
