1 small pineapple, peeled, roughly chopped
2 cups pineapple juice
1 cup mint leaves
3-4 cups ice cubes
Put pineapple, pineapple juice and mint into a food processor and process until finely chopped. Transfer to a bowl. Put ice into a food processor and process until crushed. Add to pineapple mixture. You may need to add more ice depending on the size of the pineapple. Stir until a thick, icy drink forms. Spoon into glasses and serve with long spoons.
