Date and Sunflower Loaf
Date and Sunflower Loaf recipe, brought to you by MiNDFOOD.

Serves 6

1½ cups dates, pitted

1 tsp bicarbonate of soda

½ cup apple puree

2 tbsp olive oil

1 cup organic plain flour

1 egg, lightly beaten

1 tbsp sunflower seeds

sunflower seeds (extra), to sprinkle

3 tbsp tahini, to serve

1 tbsp raw honey, to serve

Preheat oven to 180C. Grease and line a 10cm x 21cm loaf tin. Cook dates and 1 cup water in a saucepan over medium heat for 
10 minutes until thick. Remove from heat and stir in bicarbonate of soda. Transfer to 
a bowl and allow to cool slightly. Fold in apple puree, oil, flour, egg and sunflower seeds. Spoon into prepared tin, sprinkle with sunflower seeds (extra) and bake for 30–40 minutes or until a skewer comes out clean when inserted in the centre. Mix tahini and honey in a small bowl and serve with loaf.
