Christmas Muffins

Christmas Muffins
Start the day with a fresh batch of almond and craisin muffins. Served with hot coffee and orange juice the smell is sure to rouse the masses from their slumber.

Makes 12 small or 6 large Texas muffins

1¾ cups self-raising flour

⅔ cup caster sugar

½ cup almond meal

½ tsp ground cinnamon

½ cup dried apricots, chopped

½ cup craisins

½ cup sultanas

125g butter, melted and cooled

½ cup milk

2 eggs

1 tsp vanilla extract

2 tbsp raw almonds, roughly chopped

1 Line muffin moulds with paper cases. Put flour, sugar, almond meal, cinnamon, apricots, craisins and sultanas into bowl. Cover and set aside until Christmas morning.

2 Next morning, preheat oven 
to 180C. Combine butter, milk, 
eggs and vanilla in a large jug. Whisk until combined. Add milk mixture to flour mixture and stir until just combined. Spoon 
mixture into prepared paper 
cases and sprinkle with chopped almonds. Bake for 15-20 minutes or until cooked through. Serve warm.
