Almond and Craisin Muffins

Almond and Craisin Muffins
Start the day with a fresh batch of almond and craisin muffins. Served with hot coffee and orange juice the smell is sure to rouse the masses from their slumber.

These Almond and Craisin Muffins are perfect, they are even perfect for Christmas Day. Packed full of dried apricots, craisins and sultanas and spiced with cinnamon and vanilla you will be making them on repeat.

Almond and Craisin Muffins Recipe

Makes 12 small or 6 large Texas muffins

Ingredients:

1¾ cups self-raising flour

⅔ cup caster sugar

½ cup almond meal

½ tsp ground cinnamon

½ cup dried apricots, chopped

½ cup craisins

½ cup sultanas

125g butter, melted and cooled

½ cup milk

2 eggs

1 tsp vanilla extract

2 tbsp raw almonds, roughly chopped

Method:

Preheat oven 
to 180C.

Line muffin moulds with paper cases. Put flour, sugar, almond meal, cinnamon, apricots, craisins and sultanas into bowl.

Combine butter, milk, 
eggs and vanilla in a large jug. Whisk until combined. Add milk mixture to flour mixture and stir until just combined. Spoon 
mixture into prepared paper 
cases and sprinkle with chopped almonds. Bake for 15-20 minutes or until cooked through. Serve warm.
