Chicken Parcels with Roasted Capsicum

Chicken Parcels with Roasted Capsicum recipe, brought to you by MiNDFOOD.

Serves 6

40g sachet McCORMICK Slow Cookers Mediterranean Chicken

140g tub tomato paste

3 large chicken breasts, halved

1 small onion, sliced

200g tub roasted and marinated capsicums, sliced

6 sheets of foil

1 Combine McCORMICK Slow Cookers recipe base with tomato paste and stir. Coat the chicken in the tomato paste mix

2 Place one piece of chicken in the middle of the foil and top with onions and roasted capsicum. Fold and seal in a tight bundle. Repeat this with the rest of the parcels and place in the slow cooker insert pot.

3 Cover and cook for 2 hours on HIGH. (Keep covered during cooking. Cooking times may vary between slow cooker models)
