Chicken and Coriander Meatballs

Chicken and Coriander Meatballs recipe, brought to you by MiNDFOOD.

Serves 4

1kg chicken mince

½ cup fresh coriander, chopped

½ cup spring onion, chopped

1 tbsp lemongrass, finely chopped

1 tbsp plain flour

1 egg

40g sachet McCORMICK Slow Cookers Mild Chicken Curry

270ml can coconut milk

1 Combine chicken mince, coriander, spring onion, flour, egg and half of the McCORMICK Slow Cookers Recipe Base in a large bowl and mix well.

2 Roll mince into 16 golf ball size meatballs. Heat oil in a large pan and brown the meatballs and place into the slow cooker insert pot.

3 Mix the rest of the sachet with the coconut milk and pour over the meatballs.

4 Cover and cook for 2-3 hours on HIGH. (Keep covered during cooking. Cooking times may vary between slow cooker models).
