4 skinless and boneless salmon fillets
100g Blue castello cheese or similar
1/3 cup wine
6 shallots/spring onions chopped
1 Lightly grease an ovenproof baking dish with oil.
Place salmon in dish and scatter crumbled cheese and shallots over fillets. Season with freshly ground black pepper. Pour over wine.
2 Bake at 160C for approximately 20 minutes.
3 This dish can easily be made into smaller portions
and served as an entree. It is lovely served with boiled potatoes and
steamed asparagus or green beans. It is quick and easy to prepare and
the recipe can be doubled easily for larger groups of guests.
