This recipe for Puffed Tomatoes, Garlic Oil and Grilled Salmon Skewers is the perfect combination of the fresh salmon fillets seasoned with za’atar, roasted cherry tomatoes, garlic oil and Feta cream. It is definitely a recipe you will make on repeat.
Puffed Tomatoes, Garlic Oil and Grilled Salmon Skewers Recipe
Serves 4
Ingredients:
350g truss cherry tomatoes
3 garlic cloves
1 tbsp olive oil, plus 4 tbsp for Garlic oil
600g salmon fillet, cut into 3cm cube
1 tsp za’atar
3 sprigs of fresh mint, to serve
Feta Cream
100g feta
200g Greek yoghurt (or skyr)
Method:
Preheat oven to 185°C (165°C fan forced). Place the cherry tomatoes and garlic cloves on a baking tray and drizzle with olive oil. Season. Bake for 20 minutes or until the skin of tomatoes is slightly cracked. Remove the tomatoes and garlic from the oven.
Meanwhile to make the feta cream, whisk together the feta and yoghurt and season with salt. Place in the fridge.
Rub salmon with olive oil and season with za’atar, salt and pepper and thread onto skewers.
To make garlic oil, remove skins from garlic cloves, mash and mix with 4 tablespoons of olive oil.
Preheat grill to high. Turning occasionally cook the skewers for 5-8 minutes until the fish is opaque or cooked to your liking.
To serve, spoon the feta cream on a plate, top with the tomatoes and salmon and drizzle with garlic oil and top with mint.
