This Potato and Kale Soup with Bacon is a nourishing and healthy soup recipe. To make a extra warming meal top the soup with chilli flakes and paprika.
Potato and Kale Soup with Bacon Recipes
Serves 4
Ingredients:
2 tbsp butter
150g smoked bacon bits
1 onion, finely chopped
2 cloves garlic, crushed
3 large potatoes, diced into 1.5-2 cm cubes
1.2 litres vegetable stock
100g kale, shredded
1 bay leaf
¼ tsp ground smoked paprika, plus extra to serve
1 tsp chilli flakes, to serve
Method:
Heat 1 tablespoon butter in a large, heavy-based stockpot over a medium heat, add the bacon, cook for 4-5 minutes or until crisp and golden brown. Remove the bacon from the stockpot and set aside.
Return the stockpot to the heat. Add another tablespoon of butter and fry the onion and garlic for 4-5 minutes or until just translucent. Add potatoes and cook, stirring for 5 minutes. Pour the stock into the stockpot.
Add kale, bay leaf and paprika and simmer for 15 minutes. Continue cooking until potatoes are soft and the kale is cooked.
Add the bacon back to the stockpot and simmer for another 2 minutes. Remove the bay leaf. Taste and season if necessary.
Divide soup among four deep bowls and top with chilli flakes and paprika if required.
Smart Tip
You can cut the potatoes into bigger cubes, but you will need to adjust the cooking time. The potatoes will absorb the savoury broth. You can finish the soup with a sprinkle of Parmesan.
