200g sour cream
4 small potatoes, scrubbed and thinly sliced
150g ham, cut into 1cm strips
1 small red onion, cut into rings
3 spring onions, sliced (white and green parts separated)
100g soft French cheese (e.g. Camembert), diced
1 cup rocket, to serve
Dough
1 ¼ cups plain flour
1 ¼ cups wholemeal flour
1 ¼ tsp instant yeast
2 tbsp olive oil
Method:
To make the dough, mix flours, yeast, and a pinch of salt in a bowl or in a food processor with a dough attachment. Add olive oil and 180ml lukewarm water, knead for 10 minutes (or process for 2-3 minutes) until smooth. Cover with a clean, damp tea towel and let the dough rest for 1 hour at room temperature. Preheat oven to 230°C (210°C). Knead dough on a floured surface; roll out thinly.
Transfer to a baking tray lined with baking paper. Spread sour cream evenly over the dough. Put potatoes, ham, red onion, and white parts of the spring onions on the sour cream. Scatter cheese. Bake for 15-18 minutes or until edges are golden and crisp. Garnish with the green parts of the spring onions and fresh rocket.
