Pink Grapefruit, Thyme, Gin & Elderflower Popsicles
With a floral sweet taste, pink grapefruit are a good source of both vitamin C and vitamin A, and are also rich in antioxidants. Paired with the flavours of thyme, gin and elderflower they make for a fun and delicious popsicle.

Pink Grapefruit, Thyme, Gin & Elderflower Popsicle Recipe

Popsicles for Adults, for a non-alcoholic version, omit the gin and replace with ¼ cup grapefruit juice.

For an iced tea version, use ¼ cup cold strong black tea

Makes 8

Ingredients:

2 small pink grapefruit

1 cup pink grapefruit juice

⅓ cup elderflower cordial

2 tbsp lemon juice

¼ cup gin

8 small lemon thyme sprigs

Method:

Scrub the grapefruit and thinly slice. Place in a saucepan and cover with water over high heat. Bring to a simmer. Drain and set aside.

Combine the grapefruit juice, elderflower cordial, lemon juice and gin in a jug and mix well to combine.

Divide the grapefruit and thyme between 8 x ⅓ cup capacity popsicle moulds. Divide the grapefruit mixture between the moulds. Insert popsicle sticks and freeze for 6 hours
or overnight.

Smart Tip:

For a non-alcoholic version, omit the gin and replace with ¼ cup grapefruit juice. For an iced tea version, use ¼ cup cold strong black tea.
