2 small pink grapefruit
1 cup pink grapefruit juice
⅓ cup elderflower cordial
2 tbsp lemon juice
¼ cup gin
8 small lemon thyme sprigs
- Scrub the grapefruit and thinly slice. Place in a saucepan and cover with water over high heat. Bring to a simmer. Drain and set aside.
- Combine the grapefruit juice, elderflower cordial, lemon juice and gin in a jug and mix well to combine.
- Divide the grapefruit and thyme between 8 x ⅓ cup capacity popsicle moulds. Divide the grapefruit mixture between the moulds. Insert popsicle sticks and freeze for 6 hours
For a non-alcoholic version, omit the gin and replace with ¼ cup grapefruit juice. For an iced tea version, use ¼ cup cold strong black tea.
