Pear and Fennel Salad

Pear and Fennel Salad recipe, brought to you by MiNDFOOD

red onions, thinly sliced


parsley leaves


fennel, thinly sliced


Asian pears, sliced


lemon mustard dressing


arugula

fresh goat cheese (chèvre)


1.5 tbsp honey



1. Toss red onions, parsley, fennel and pears in a bowl with enough lemon mustard dressing to lightly coat everything. 


2. Place arugula in the middle of the plate. Stack pears in a circle, placing some of the fennel, parsley and onion mixture between each slice of pear. 


3. Garnish salad with small pieces of goat cheese. Drizzle some honey around the plate.



For the lemon mustard dressing


40ml lemon juice


2 tsp wholegrain mustard (such as Pommery)


2.5 tbsp Dijon mustard


120ml extra-virgin olive oil

Place all of the above ingredients except for the oil in a blender.
 Blend until smooth. With the blender running, slowly add olive oil. Adjust the seasoning to taste.
