Pasta Frittata
Pasta Frittata recipe, brought to you by MiNDFOOD.

This recipe for Pasta Frittata is a great way to use up left over bolognese, and makes an easy mid-week meal.

Serves 4

5 eggs, whisked

250g leftover cooked spaghetti

bolognese (from Spaghetti Bolognese recipe)

½ cup finely grated parmesan

rocket salad, to serve

 

1 Preheat oven to 180˚C. Grease 
a 5-cup-capacity frying pan or heatproof dish. Whisk eggs in a large bowl. Add bolognese, and 1/3 cup of cheese. Stir until well combined.

2 Pour into prepared dish. Bake for 35 minutes or until eggs are set. Sprinkle with remaining parmesan.

3 Serve with rocket salad seasoned with sea salt, freshly ground black pepper and a drizzle of olive oil.
