This recipe for Pasta Frittata is a great way to use up leftover spaghetti bolognese, and makes an easy mid-week meal.
Pasta Frittata Recipe
Serves 4
Ingredients:
5 eggs, whisked
250g leftover cooked spaghetti
bolognese (from Spaghetti Bolognese recipe)
½ cup finely grated parmesan
rocket salad, to serve
Method:
Preheat oven to 180˚C. Grease a 5-cup-capacity frying pan or heatproof dish. Whisk eggs in a large bowl. Add bolognese, and 1/3 cup of cheese. Stir until well combined.
Pour into prepared dish. Bake for 35 minutes or until eggs are set. Sprinkle with remaining parmesan.
Serve with rocket salad seasoned with sea salt, freshly ground black pepper and a drizzle of olive oil.
