Paisley Plum Tequini. Say a big cheers to the weekend with a glamorous cocktail made with tequila and plum, sure to put you in the mood for a celebration.
Makes 6 drinks
270ml tequila
90ml vanilla syrup
180ml cranberry juice
180ml chamomile tea, steeped,
strained and chilled
1 plum, pitted and sliced,
plus plum slices, to garnish
Muddle plum in the base of a Boston mixing glass and then add with remaining ingredients to a large jug. Stir with ice and strain into a chilled martini glass. Garnish with a plum slices in base of glass before pouring.
tip: An alternate fancy plum fan garnish can be made by slicing a cheek of a fresh plum with a sharp knife, and then thinly slicing it into D-shaped slices. Be sure to keep all the slices together in the original shape of the plum cheek. Gently press down on the grouped slices to spread one end of the plum slices out into a fan. Then push the fan into the base of the martini glass and it should stick to the inner wall. Now pour your cocktail.
Vanilla Syrup
Makes 750ml
350g white sugar
750ml water
2 vanilla beans, seeded
Add the ingredients to a pot and cook over medium heat for 30 minutes, stirring occasionally. Strain off solids and allow mix to cool before pouring into a sterilised bottle. Keep sealed in the refrigerator for up to two weeks.
