Makes 54 small pieces
125g butter
½ cup brown sugar
1/3 cup sweetened condensed milk
½ tsp vanilla extract
250g packet plain biscuits, crushed
½ cup sultanas or dates, chopped
½ tsp ground ginger
For the Icing
2 cups icing sugar, sifted
½ tsp ground ginger
40g butter, softened
1 tbsp hot water
½ tsp vanilla extract
100g glacé cherries, chopped
½ cup walnuts, roughly chopped
1 Line a 30cm x 20cm slab pan with baking paper. Melt butter, brown sugar, condensed milk and vanilla in a saucepan over a medium-low heat. Add crushed biscuits, sultanas and ground ginger. Stir until well combined. Press mixture into prepared slab pan and refrigerate.
2 Place icing sugar and ginger into a bowl. Add butter, water and vanilla. Stir until well combined and a smooth icing forms. Spread onto slice. Sprinkle with cherries and walnuts. Refrigerate until set. Cut into small pieces and serve.
