Mojito Jellies with Mango, Mint & Lime Sugar. This refreshing dessert is the perfect adults-only treat to indulge in over the summer months after a great dinner with friends.
Serves 6
1 lime, zest and segments
2 cups white wine such as moscato
1 cup caster sugar, plus 2 tbsp extra
1 bunch mint
2 tbsp white rum, plus 1 tbsp extra
¼ cup lime juice
5½ titanium-strength gelatine leaves
1 tbsp finely grated lime zest
2 ripe mangoes, peeled, chopped into 1cm pieces
Remove zest from lime. Segment lime and reserve for serving.
Combine lime zest, wine, 1 cup water and 1 cup sugar in a medium saucepan over medium heat.
Bring to the boil, stirring to dissolve sugar. Simmer 1 minute. Add half the mint, including stalks; remove from heat, cover and set aside 30 minutes.
Strain mixture into a clean saucepan. Add white rum and lime juice; heat until hot.
Soak gelatine in a large bowl of cold water until soft. Squeeze out excess water and add to wine mixture, stirring to dissolve.
Cool mixture for 10 minutes. Transfer to a jug and pour mixture evenly between 6 cocktail glasses. Refrigerate for 4 hours or until set.
Remove leaves from remaining mint. In a small food processor combine
1 tablespoon lime rind, extra sugar and a small handful of the remaining mint leaves. Process until finely chopped.
In a small bowl combine mango, reserved lime segments, extra white rum and half the mint-and-lime sugar.
To serve, top jellies with mango salad and sprinkle with remaining mint-and-lime sugar.
