Makes about 1 serving plus a little extra
Â½ cup Kale, chopped
Â¼ cup cherry tomatoes quartered
1 Â½ tablespoons olive oil
1 tablespoon lemon juice
1 small clove garlic
1/8-1/4 teaspoon pepper (to taste)
1 Â½ tablespoons pumpkin seeds toasted
Massage kale with the olive oil, salt and lemon juice for about 3 minutes & let it sit while you prep the rest.
Toss all ingredients together and marinate for about 20 minutes prior to serving.
