Maple Syrup Mixed Nut Tart Recipe
Serves 6-8
Ingredients:
185g plain flour
20g sugar
130g cold butter, cut into small cubes
3 tbsp ice-cold water
For the filling
250g mixed nuts of your choice
65g butter
120g brown sugar
130ml maple syrup
1 tsp vanilla extract
1 tsp cinnamon
3 eggs
Method:
Preheat oven to 180°C (160°C fan forced). Grease and flour a 24cm baking tin. To make the dough, in a bowl, mix the flour with sugar and ¼ teaspoon salt. Add the cold butter and mix briefly with your fingers or use a food processor to form a crumbly dough. Add the ice-cold water and knead briefly to form a cohesive dough. Cover with cling film and refrigerate for 30 minutes.
Roll out the dough to 5mm thickness. Carefully place the dough in the baking tin.
Meanwhile, to make the filling, coarsely chop half the nuts and pour them over the tart base. Melt the butter with the brown sugar, maple syrup, vanilla, cinnamon and a pinch of salt. Mix the butter mixture with the eggs and the whole nuts. Pour this on top of the chopped nuts.
Place the tart in the oven, cook for 35 minutes or until the filling is set. Once cooked, allow to cool on a wire rack before serving.
