Traditionally, high teas are served on a three-tiered cake stand – so, if you own one, dust it off. If you don’t, you can follow the same principle by serving three distinct courses. Follow our guide for a high tea that’s sure to make mum’s day.

First course

The first course is traditionally a selection of light sandwiches. Choose any fillings you like, though popular picks include cucumber, egg and cress, and smoked salmon. For an elegant touch, cut off the crusts. Add your own twist with other savoury snacks such as mini sausage rolls or quiches.
