Lemon and Herb Mushroom Salad
This summer salad is quick and easy, the perfect addition to any BBQ.

Serve this Fresh Lemon and Herb Mushroom Salad with chicken, fish or grilled meat. The Lemon Chilli Dressing is perfect with the sliced Button Mushrooms, mini cucumbers and roughly chopped flat leaf parsley.

Lemon and Herb Mushroom Salad Recipe

Serves 4 as a side salad

Ingredients:

Lemon Chilli Dressing

125ml (1/4 cup) extra virgin olive oil

Juice of one lemon

2 red chillies, de-seeded and finely chopped

Mushroom Salad

250g Button Mushrooms, sliced

4 mini cucumbers

1 bunch flat leaf parsley, roughly chopped

Method:

To make the Lemon Chilli Dressing, in a screw top jar combine olive oil, lemon juice, chillies and a pinch of salt. Put on the lid and shake until well combined.

To make the Mushroom Salad,  add all salad ingredients to a bowl, top with dressing and gently mix to combine.

Serve as a side salad with chicken, fish or grilled meat.
