Try Leek and Mâche Soup with Smoked Salmon. Sometimes known as lamb’s lettuce, mâche is a versatile leafy green which has a uniquely mild, refreshing tang and a slightly nutty flavour.
Leek and Mâche Soup with Smoked Salmon Recipe
Serves 4
Ingredients:
1 tbsp olive oil
2-3 leek stalks, trimmed and thinly sliced into rounds
1 litre vegetable stock
50g mâche, plus extra to serve
80-100g smoked salmon, cut into strips
80ml single (pouring) cream, to serve
Wholemeal sourdough, to serve
Method:
Heat oil in a large, heavy-based stockpot over a medium-high heat, add the leeks and cook for 8 minutes or until soft. Pour the stock into the stockpot and bring to the boil, reduce the heat and cook for 10-15 minutes or until the leeks are cooked.
Remove soup from heat, use a stick blender to blend the soup until smooth. Add the mâche and continue blending. Do not let the soup boil again.
Divide soup among four bowls and top with smoked salmon, drizzle with cream and garnish with remaining mâche.
Serve soup with the wholemeal sourdough.
