Lamb Sausage Rolls with Spicy Cauliflower. Sausage rolls are the stuff of childhood dreams. These moorish lamb variety served with spicy cauliflower is a modern twist that will excite adult palettes too.
Lamb Sausage Rolls with Spicy Cauliflower Recipe
Serves 4
Ingredients:
2 tbsp ghee
1 onion, finely chopped
2 cloves garlic, crushed
1 carrot, grated
⅓ cup massaman curry paste
2 tbsp curry leaves
500g minced lamb
1 cup fresh breadcrumbs
¼ cup chopped coriander
¼ cup chopped mint
2 eggs, lightly beaten
2 sheets puff pastry
nigella seeds and sesame seeds, to sprinkle
mango chutney, to serve
Spicy Smashed Cauliflower
2 tbsp ghee
1 onion, finely chopped
2 cloves garlic, crushed
1 tbsp finely grated fresh ginger
1 tbsp finely chopped lemongrass
2 long red chillies, chopped
650g cauliflower, chopped
1 tsp turmeric
2 tbsp chopped coriander
2 tbsp chopped mint
Method:
Preheat oven to 200°C. Heat ghee in a frying pan over medium-low heat. Cook onion, garlic and carrot, stirring occasionally, 7 minutes. Add curry paste and curry leaves. Cook, stirring, 1 minute.
Transfer to a large bowl. Cool. Add mince, breadcrumbs, coriander, mint and half the beaten egg; mix. Season.
Line a large baking tray. Halve pastry sheets lengthways.
With ¼ of the mince mixture, form a 4cm wide log shape along each long side. Brush edges with remaining egg. Roll up; cut into four pieces. Place, seam side down, onto tray. Brush tops with a little more egg; sprinkle with seeds. Bake 25 minutes.
To make spicy cauliflower, heat ghee in a deep frying pan with lid over medium-low heat. Add onion, garlic, ginger, lemongrass and chilli.
Cook, stirring, 8 minutes. Add cauliflower and turmeric.Cook, stirring, 1 minute. Add 1 cup water. Cover; simmer 10 minutes. Remove lid after 8 minutes to evaporate excess water. Season. Roughly smash cauliflower. Stir in coriander and mint.
Serve sausage rolls with spicy smashed cauliflower and mango chutney.
