Lamb Loins with Proscuitto

A simple, tasty recipe from Silver Fern Farms' Home Cook of the Year Competition.

Lamb Loins with Proscuitto

Serves 2

340g Silver Fern Farms Lamb Loin Fillets

10 slices prosciutto

1 cup baby spinach or baby kale leaves

100g crumbly feta

Green beans and long-stemmed broccoli

Preheat oven to 180°C. Use a sharp knife to make a horizontal cut, about three-quarters deep, in each Silver Fern Farms Lamb Loin Fillet (without cutting all the way through).

Open each Silver Fern Farms Lamb Loin Fillet and lay spinach or kale inside each, then crumble over feta. Fold over fillets to enclose. Wrap with slices of prosciutto. Grind over black pepper. Brush with olive oil.

Place in the oven for 30 minutes or until tender. Serve with pan-fried green beans and long-stemmed broccoli, or seasonal vegetables of your choice.
