Makes 24
125g butter
1½ cups icing sugar, plus extra for dusting
2 tsp finely chopped kaffir lime leaves or 1 tsp kaffir lime leaf powder
1 tbsp lime zest
2 cups plain flour
1 cup sour cream
¼ tsp salt
Kaffir Lime Icing
2 cups icing sugar
2 tsp finely chopped kaffir lime leaves or 1 tsp freeze dried kaffir lime powder
1 lime, juice of
50g butter, melted
Preheat oven to 160°C. Grease and line a baking tray with baking paper.
In the bowl of an electric mixer, beat together butter and icing sugar until light and fluffy. Beat in kaffir lime leaves or powder and lime zest.
Sift in flour. Add sour cream and salt; combine. Roll into small balls; place on baking tray. Press down each ball with a fork. Bake for 10-12 minutes or until light brown.
To make icing, sift icing sugar into a bowl and mix in kaffir lime leaves or powder and lime juice. Add butter. Add a little boiling water to mix to a spreadable consistency (approximately
2 tablespoons).
Sandwich together biscuits with icing.
