Jarrah Honey Ham & Potato Lasagna

Ingredients

6-7 slices Australian Jarrah Honey Leg Ham

2 large Sweet potatoes, peeled 

5 large Royal blue potatoes, peeled 

2 cup Tasty cheddar cheese, shredded

2 Eggs, lightly beaten

1 cup Heavy cream

1½ cup Parmesan, grated

1 tsp Italian Herbs

¼ cup Parsley, chopped

Sea salt, to taste

 

Method

Preheat oven to 180°C. In a bowl mix eggs, heavy cream, parmesan, Italian herbs, parsley and sea salt. Slice the peeled potatoes into ½ cm slices. Transfer the sliced potatoes into the egg mixture bowl tossing them to make sure they are coated evenly.

Press a layer of sweet potatoes evenly into the bottom and sides of a loaf tin lined with grease proof paper. Alternate between the two potato slices. Place half of the sliced ham evenly on top of the potatoes and then cheddar cheese.

Follow with another layer of sweet potatoes, then the remaining ham, followed by another layer of royal blue potatoes and then top the final layer with the remaining sweet potatoes. Press it in to form a nice even layer to ensure even baking. Cover the topmost layer with a grease proof sheet of paper. 

Bake for about 40 mins or until the top gets deep golden brown and potatoes seem cooked in the middle (can be checked by poking the centre with a bamboo skewer, if it goes through smooth without any resistance then it is cooked well). Cool slightly, slice and serve with a cheesy sauce, salad or relish.
