Italian Tomato and Truffle Salad Recipe
Serves 8-10
Ingredients:
1 kg heirloom tomatoes, thickly sliced
1 shallot, finely chopped
2 tbsp truffle oil
¼ cup red wine vinegar
2 tsp caster sugar
2 tbsp grated Parmesan, to serve
1 cup basil leaves, to serve
Method:
Season tomatoes with salt and set aside for 5 minutes. To make dressing, combine shallot, truffle oil, red wine vinegar and sugar in a bowl and whisk to combine. Place tomatoes in a large flat bowl. Season with pepper. Add dressing and toss to combine.
To serve, top salad with Parmesan and basil leaves.
