Juicy and tender yoghurt and tikka masala marinated chicken skewers are perfect cooked until crispy in the air fryer and served sprinkled with parsley, warm naan breads, cucumber salad, and a creamy yoghurt mint dip. Indian Skewers with Yoghurt Mint Dip are perfect served for lunch or dinner or as part of an Indian feast.
Indian Skewers with Yoghurt Mint Dip Recipe
Serves 4
Ingredients:
120g plain yoghurt
100g tikka masala paste
500g chicken tenders
Olive oil spray
1 garlic clove, crushed
2 tbsp fresh mint, finely chopped
1 tbsp parsley, finely chopped 4 naan breads, toasted to serve
Cucumber salad
1 cucumber, cut into thin ribbons
1 tbsp white wine vinegar
1 tbsp peanut oil
1 tbsp fresh dill, finely chopped
1 tsp pink peppercorns, lightly crushed
Method:
In a large non-reactive bowl, mix 2 tablespoons of yoghurt with the tikka masala paste, add the chicken tenders. Toss to coat, cover with plastic wrap, and refrigerate for at least 30 minutes.
Preheat the air fryer to 200°C. Thread the chicken onto skewers, spray lightly with oil, and place in the air fryer basket. Air fry for 10 minutes, turning halfway. Leave space between skewers so air circulates and crisps the chicken evenly, you may need to cook the chicken in batches.
Meanwhile, make the cucumber salad. In a non- reactive bowl, add the cucumber ribbons, vinegar, oil, dill, and pink peppercorns. Mix gently to combine. Season, cover with plastic wrap and set aside.
To make the yoghurt mint dip, in a bowl mix the remaining yoghurt with the garlic and mint. Season, cover with plastic wrap and set aside in the fridge.
Sprinkle the chicken skewers with parsley and serve with warm naan breads, cucumber salad, and yoghurt mint dip.
