Maple-Baked Pork with Carrots is made with 6 ingredients. Midweek meals have never been simpler than with this easy marinate-and-bake roast pork. The maple syrup glaze caramelises the carrots to perfection and works beautifully with the pork cutlets.
Maple-Baked Pork with Carrots
Serves 4
Ingredients:
¼ cup olive oil, plus 2 tbsp
½ cup maple syrup
8 carrots, peeled and chopped into batons
20 sage leaves
4 garlic cloves, crushed, skin on
4 pork-loin cutlets
Method:
Preheat oven to 200°C. Place 1/4 cup olive oil and maple syrup in a bowl, season with salt and pepper, and whisk to combine.
Put carrots, sage, and garlic in a large baking dish and spoon over half the maple-syrup mixture.
Cook in oven for 15-20 minutes or until carrots start to caramelise. Heat oil in a nonstick frying pan and cook pork for 1-2 minutes on each side. Set pork on top of carrots in baking dish and pour over remaining maple-syrup mixture.
Return to the oven and cook for another 8-10 minutes or until pork is cooked through. Season with black pepper.
Serve with salad.
