Hot Apple Cider Toddy. Give apple cider a sophisticated makeover with this simple hot toddy recipe. Serve with delectable frittata slices for easy weekend entertaining.
Serves 4
2 cups apple cider
2 cinnamon sticks
8 whole cloves
1 star anise
2 tbsp honey
4 x 5cm strips lemon rind
⅔ cup Calvados (apple brandy)
1 apple, thinly sliced
Place first six ingredients in a saucepan over medium heat. Bring to simmer.
Remove from heat; strain through sieve. Add Calvados, stir.
Divide among glasses. Add apple slices to serve.
Green Olive, Artichoke & Potato Frittata
Serves 4-6
2 tbsp olive oil
2 potatoes, thinly sliced
1 brown onion, thinly sliced
4 marinated artichokes, cut into
wedges
½ cup feta-stuffed green olives,
thinly sliced
200g camembert, thinly sliced
½ cup flat-leaf parsley leaves
6 eggs, lightly whisked
½ cup pouring cream
Heat half the oil in an ovenproof frying pan. Add half the potato; cook for 1-2 minutes each side. Transfer to a plate. Repeat with remaining potato.
Heat remaining oil in ovenproof pan. Add onion. Cook, stirring, for 5 minutes. Transfer to a plate. Return potato to pan in alternating layers with onion, artichoke, olives, camembert and half the parsley.
Whisk eggs and cream together. Season. Pour over potatoes, sprinkle with remaining parsley. Reduce heat to low. Cook for 5 minutes.
Place under grill. Cook for 2-3 minutes, until golden. Cool; cut into wedges before serving.
