We’re probably all aware by now that nuts are one of nature’s wonder foods. Not only are they a delicious snack for an energy boost, they’re high in monounsaturated fats, associated with reduced risk of heart disease, and contain vitamin E, magnesium and potassium. There is a school of thought that believes almonds are more digestible when “activated”. Here are just a few of the health benefits:
- Activated nuts are gentler on the digestive system
- They reduce phytic acid levels, which interfere with the body’s absorption of minerals
- The bioavailability of nutrients in nuts is increased once activated
To activate, soak in water for 12 hours. Rinse and then dehydrate the almonds – either in a dehydrator or on the lowest temperature in your oven – until the nuts are dry.
